Brinjal Fry is a tasty dish.Brinjal is fried in Oil till it turns crisp and golden colour.
- Diced brinjal / egg plant - 1 cup
- Diced onion - 2 tsp
- Turmeric powder - ¼ tsp
- Red Chili powder - ½ tsp.
- Salt – to taste
- Oil - 2 tsp
- curry leaves - a few
- Mix brinjal / egg plant pieces with turmeric powder, red chili powder and salt.
- Heat oil in a pan.
- Add onion and saute for a minute.
- Put brinjal and curry leaves into it and fry utill it turns to golden colour.
